Treat yourself with this delicious tart with figs and green olives in tartlet.
Ingredients for 4 persons :
For the dough:
- 200g of shortbread
- 15g unsalted butter
For garnish :
- 18 figs
- 100g green olives
- 25g caster sugar
For the rest of the recipe:
- 2 egg yolks
- 1 egg
- 30cl of whole liquid cream
- 1 orange
- 65g caster sugar
Fig and green olive tart
For the dough:
Roll out the sweet dough finely. Line lightly buttered tartlets, let them rest in the refrigerator for 10 min. Preheat the oven to 180 °.
Bake the tart shells for 10 minutes
For garnish :
Cut the figs into quarters. Cut the olives into petals then rinse them.
Mix the two fruits and sprinkle them with sugar. Let them marinate for 10 minutes.
For the custard:
In a bowl, mix the sugar with the eggs and add the cream. Zest an orange and add it to the custard.
For baking the tarts:
Place the fruit in the tarts, letting them hang out. Then fill the tartlets with the custard machine and place them in a hot oven for about 20 minutes.
Check the cooking of the custard and unmold the tartlets at the exit of the oven.
The Chef's tip
You can peel the figs if the skin is too thick. If you get some juice from pickling the fruit, add it to the custard.
